Cannabis Breakfast Skillet

INGREDIENTS:

  • 1 sweet potato, cubed
  • 1 ⁄2 cup green pepper diced
  • 1 ⁄2 cup onion diced
  • 1 ⁄2 cup mushroom diced
  • 1 Roma tomato diced
  • 2 tablespoons zucchini cheese, shredded
  • 2 teaspoons Cannabis oil
  • 2 teaspoons cumin
  • Fresh ground black pepper to taste

INSTRUCTIONS:

  1. Drizzle Cannabis oil over sweet potato cubes in a baking pan, and season with cumin and black pepper.
  2. Bake for 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat when the potatoes are approximately halfway done baking.
  4. Fry the green pepper, onion, and mushrooms in a skillet.
  5. When the potatoes are done, combine them with the vegetables.
  6. Take the pan off the heat, add the tomato, and set it aside.
  7. Sprinkle zucchini cheese on top. You can sub out zucchini cheese with the cheese of your choosing.
