INGREDIENTS:
- 1 sweet potato, cubed
- 1 ⁄2 cup green pepper diced
- 1 ⁄2 cup onion diced
- 1 ⁄2 cup mushroom diced
- 1 Roma tomato diced
- 2 tablespoons zucchini cheese, shredded
- 2 teaspoons Cannabis oil
- 2 teaspoons cumin
- Fresh ground black pepper to taste
INSTRUCTIONS:
- Drizzle Cannabis oil over sweet potato cubes in a baking pan, and season with cumin and black pepper.
- Bake for 30 minutes.
- Heat olive oil in a skillet over medium-high heat when the potatoes are approximately halfway done baking.
- Fry the green pepper, onion, and mushrooms in a skillet.
- When the potatoes are done, combine them with the vegetables.
- Take the pan off the heat, add the tomato, and set it aside.
- Sprinkle zucchini cheese on top. You can sub out zucchini cheese with the cheese of your choosing.
